Struggling with Dinner Ideas: Seeking Easy, Kid-Friendly Meals for a Busy Schedule

Toasties and salad, tuna pasta bake, jacket potatoes offer different fillings, pizzas get them to make their own (can be made on pitta instead if pizza dough also), bbq fajitas, chips with chicken poppers, sweetcorn and chicken gravy, mash potato volcano with sausages, peas and gravy
 
Hi love so I do lots of home cooking (I'm vegitarian but my meals are adaptable because my daughter eats meat) anyway my meals are pretty easy and straightforward but I've had lots of positive comments off people wanting recipes of my food and people keep asking me to publish a recipe book which I've no intention of doing currently but I've set up a Facebook group with easy simple cheap family meals mainly vegitarian but adaptable would you like the link?
 
@ghostcow ridiculously. One is border line eating disorder aswell as other difficulties such as Tourette’s and seizures so can’t always have her help unless I want to wear the food 😂
 
If they have a full hot dinner then my boys love a ‘snacky plate’ - fruit and veg sticks, cheese, salami, bread and butter (or a sandwich)
Otherwise we do chicken curry, beef chilli, chorizo pasta, homemade pizza, chicken/fish n chips
 
You don't sound like a bad cook - you sound like an absolute Saint!
I agree that you should ask the kids to help you plan a menu, and compromise here and there so it suits everyone. Jacket potatoes with a couple of different fillings come to mind, but the possibilities are endless.
 
@waclaf no I generally cook something every night but always feel guilty that it’s typical kid food but they won’t eat anything else. I just dread it every night when I’m shattered etc x
 
@arancf13 When my daughter and grandson lived with us he had school meals . He had a light snack when he came in . Then for tea he would have e.g cucumber cheese grated carrot crisps pepperoni breadsticks etc etc sometimes I would make pancakes ( his favourite) or we would make tuna pasta or some sort of pasta. Or it might be scrambled eggs spaghetti toast , just to give u an idea oh and maybe cereal and a piece of fruit for supper Don’t stress kids grow up anyway and make their own choices, hope this is helpful
 
My kids have hot dinner at school and usually want a picnic dinner when they come home. This is usually a combination of sandwhich/wrap, crisps, carrot, cucumber, grapes, melon, ham, cheese, soreen loaf, jelly, yoghurt. They LOVE it. And then I batch cook. So I will make a giant portion of bolognaise. Same some for spaghetti bol, add some kidney beans and spice to some for chilli con carne, mix some with veg and add mash and make a kinda cottage pie.
I also have curry etc made in freezer. I freeze it all then get out what I fancy. We sometimes eat all together, sometimes separate but I always sit with them while they are eating.
Thursday is swimming so that day we have something hot we all like-usually pasta pesto with peas and chicken or pasta meatballs.
 
I’m a big fan of one pot & batch cooking. Saves lots of time and can keep batches in the freezer. Some of the frequent ones are
Chicken satay
Bolognaise
Mexican chicken
Meatballs
Beef Chilli
Creamy chicken & mushroom pasta

@bigsarge yup. I throw everything into a casserole dish:
4/5 Chicken thighs
Onion sliced
2 peppers sliced
2 garlic cloves crushed
1 tablespoon curry powder
3 tablespoons soy sauce
2 tablespoons peanut butter
2 tablespoons oyster sauce
I marinate the chicken in a dish. Then put the onions on top… after 20 mins I put the peppers on top and cook a further 20 🤌🏼
Shred or chop chicken once cooked - it’s easier
Also lovely with mushrooms instead of peppers but I would fry them before adding 🍄
 
Can I ask a serious question? Who decided dinner meals needed to be this grand huge thing? My kids will ask for the random stuff, eggs and bacon, pancakes, toasties, then sometimes mashed potatoes and something, chicken from the shop, sometimes just French toast. We try and at least 1 main meal but who said it needs to be dinner?
 
@thesammyshow from reading this I’m probably over thinking it. I just imagine every mom in the kitchen for hours and all sitting round the table etc but actually it seems from this I’m no different. I just don’t enjoy the hassle every night but I’m going to write a list so we all know what’s what x
