Struggling with Dinner Ideas: Seeking Easy, Kid-Friendly Meals for a Busy Schedule

Look on the pinch of nom site. They do lovely meals which are really easy to do and very yummy. The creamy garlic chicken is just like stroganoff which is my son’s favorite, so I change it to beef, and serve with rice. X
 
Mate. I hate cooking so much. It gives me extreme anxiety. I hate even being at the grocery these days. Who has time for that bullshark? Ive got other stuff to do.
Altho, I am grateful that I have no one relying on me in order to survive cos that would not be great. My partner and I fend for ourselves OR do random cook ups (him) OR buy ready to cook meals, which, are fabulous. Premarinated meats, or roasts, shepherd pies, lasagne, whatever. Im jot talking frozen, microwave dinners, but nicely prepped wholesome feeds. Theres tons of choice in those these days. I got prawn hotpot from Aldi the other day.
There is zero harm or judgement in eating food like this. I also do extreme salads - you can get an amazing pre made variety of salads these days. strip a roast chook and throw it in with some sundried tomatoes and avocado or other delicious variations. I also love noodles - cook some up and chuck in roast chook, snow peas and broccoli. Gourmet!
Tbh tho, who says u need to do a massive hot meal? As long as ur hitting some nutritional needs and everyone is fed, who cares. Ploughman's plates with crudites and hummus, or peanut butter on celery or apples, boiled eggs, cereal... if ur kids are old enough, get them cooking.
 
Wow thankyou so much everyone. Really appreciate the feedback, I think I’ve been overthinking it. My mom used to spend hours cooking every night when I was a child so I just expected that to be the norm. I’ll sit down with them and go through things and see what’s what. Really appreciate every single one of the replies. And for the ones that can’t cook, at least our kitchens look nice 😬😂 xx
 
Mine are really fussy so no expert - but surely if they are having school dinners then tea could be beans on toast, boiled eggs, cheese toasties, pasta & sauce, sandwich & crisps, jacket potato & cheese, fishfingers, pizza. Then if you’re worried about fruit then fruit smoothies or cut up apple will be sufficient. I think people suggesting things like slow cooker meals, cottage pie & so on are probably more used to doing a big shop & cooking from scratch.

I post lots of family meal inspo and meal plans and it’s all stuff that my kids eat. Some is super easy and I love a one pot dish! My biggest tip so meal plan!! There’s nothing more stressful than not knowing what you’re cooking each night. If you know what you’re having or at least have a small amount of options, you’ll feel calmer and more in control. Also prep on weekends can be so so helpful. You can make things like shepherds pie ready to go in the oven, pasta sauces etc and it’ll take some stress and time off on the day you have it.
 
What about toasties/panini’s? I bought a small panini maker on Amazon for around £10 and it’s paid for itself tenfold - filled panini with salad are delicious x
 
Quick:
Different kinds of pasta, with pesto and grated mature cheddar; or with pesto tuna and sweetcorn.
Instant mash or boiled potatoes, with corned beef mash and cheese, or boiled eggs.
Omelette: dice and fry a little onion & pepper, whisk 2 eggs per person with a little milk, & cheese, add to frying pan. Add sliced potatoes, bacon, mushrooms or whatever, on a low heat, then stick under the grill to brown the top. Mind you don't burn your fingers on the pan
Slow cooker (you can bulk prepare and then freeze in dump bags):
Chop and bag all the root veg, and chuck some chopped meat on top - pork, beef, chicken. Add gravy granules before eating.
3bean chilli - cans of kidney, cannellini, and your preference; chopped timatoes, tomato puree, spoons of chilli, paprika, garlic, a chopped onion, and some stock. Add meat if you want, or lentils.
Eat with rice, then use the leftovers in nachos or enchiladas.
 
Jaime Oliver take 5 cook book, get the kids involved in the peeling chopping etc. they could help pick new recipes to try, say one a week on a weekend when your all less busy. Make it fun and they will probably be willing to try more. Making pizza together and they can add their own toppings. Also have a look at no bake desserts, anything that’s helps you all see that cooking together can be fun. You could do cooking course together if there’s one local to you.
 
My daughter is incredibly fussy. She's pescitarian, my son is vegetarian, my husband is fussy and I'll eat whatever going.
I find if I get my daughter to help me cook she's more likely to eat. If I make a potato and chickpea curry from scratch (dead easy and cheap) she won't eat it.... if I let HER make it she'll devour it. Get your kid involved 😊
 
Pasta, macaroni cheese, pizza’s. Jacket potatoes. Toasties, omelettes and pancakes. All easy to do. I know as am a rubbish cook too. Add salad to get the 5 a day in and fruit or smoothies too.
 
We have a bit of a routine with meals, due to clubs after school. Tuesdays is sometimes jackets so beans and cheese for them, sometimes I’ll do a chilli for us 🌶 veggie or gnocchi with pesto. They love gnocchi!
Wednesdays is usually beef, either cottage pie, spag Bol or stew. I have more time on a Wednesday for cooking.
Thursday pizzas but frozen! With humous and salad.
Friday fish Friday, fish fingers for them, something a bit nicer for us. Like fish tacos which is our fave fish 🌮 Jamie Oliver recipe
Saturdays we’ll let the kids pick. So sausages, meatballs, or katsu curry 🍛 they enjoy a mild curry with plenty of coconut milk. Homemade pizzas. Pizza is probably there fave 😂
Sunday is usually a roast dinner which we all enjoy. Most often chicken 🐓
Mondays will be leftover Mondays, with leftover roast dinner/chicken to use for pasta or curry or risotto which all the kids don’t like now 🙈
My 8 year old likes to know what’s for dinner and likes a bit of a routine. So half the week is the usual and then certain days we mix it up.

My husband usually cooks at the weekends.
It’s a bit boring and I love being more adventurous! But hopefully they’ll eat more exciting food as they get older.
Mine are: 2 yr old extremely fussy! 6 yr old obsessed with potatoes! 8 yr old Autistic and super fussy and 10 yr old eats anything but celiac.
I try to always have something green on the plate!
