The north of Hungary has some gorgeous little towns, Eger has a great castle, some lovely little shops and a water park, as well as a valley full of wine caves with gypsy bands playing on a Saturday night. The food and accommodation is normally amazing (we have been a few times) for what you pay!
The other side of Budapest you have lake Balaton, we stayed in Siofok a couple of times and it’s a bit of a party town in middle of summer but there are some lovely little lakeside spots (there’s no coast so the lake is great for swimming and boat trips etc).
It’s all fairly well served by railways, you do have to be a bit adventurous and of course I haven’t been for about 7 years so things may be slightly different but it’s one of my favourite countries ever!
