What a lovely idea! Things you probably need to think about is who will be with her when she's away, so maybe close to her family may be an idea! The suffolk and Norfolk coast are beautiful, Southwold and Aldeburgh are my favourites! Also the health care system near there have good facilities for Oncology! She's very lucky to have such a caring neice

The Ayrshire coast is lovely and quite flat. You would be spoiled for choice in Troon or prestwick, both of which have lovely cafes but Troon has the better beaches because there’s the choice of two!
 
Will she be undergoing chemotherapy or radiotherapy? Close to hospital should be a big consideration. Hospital visits can be exhausting so a long journey to and fro makes it harder.
 
Health in wales is devolved - so a move from England to wales would be disruptive for treatments - just something worth thinking about c
 
Can't help with a place, but I've looked after oncology patients for over 15 years so, from a care perspective, try to plan ahead as her diet might get to a point where she is limited and can't manage harder foods. Think about what she might enjoy that's softer, opt for full fat versions of everything to keep weight up, and try to make sure there's a good amount of sauce/gravy with drier foods. She may get to a point where she likes to have several small meals, and try to make sure there is lots of build up type drinks available. You should be able to get these prescribed for her. There's quite a variety now. Sending you strength - you're doing a great thing by focussing on the life that is left to be lived x
 
Beadnall in Northumberland, absolutely stunning, one side is a pebble beach and rocks (fantastic for winkling) the other is a beautiful sandy cove, it’s a very clean beach with lovely clear water, then you can drive five minutes down the road to Seahouses and get a chip shop tea and lush ice cream ❤️
 
Llandudno has two beaches and proms, good shops, plenty of things to do. It has good road, bus and rail links. Both Glan Clwyd and Bangor Hospitals are nearby. West Shore is much quieter and less touristy than the main beach and pier.
